This is a restaurant that knows how to have a good time, but takes sustainability seriously - and that's reflected in the aforementioned locally-sourced produce, seating in the form of vintage design chairs, a dining room lit by super-efficient LEDs, and hand dryers in the washrooms which consume half the normal power.
